Chicken Cacciatore

Here’s how I made my Noni’s recipe for chicken cacciatore healthy.

Normally when making this dish, you brown the chicken pieces first in oil, and everything else is sautéed in oil. This adds a lot of calories.

For me though, what gives this dish it’s flavor is slow cooking the chicken in wine, not the oil, so I thought, Crockpot! No oil! I use a combination of boneless breasts and legs and thighs with the bone.

Here it is:

4-6 pieces of chicken, such as boneless breasts or even bone on but all skin removed, and excess fat removed.
1 pepper sliced or diced your preference
1 onion sliced or diced your preference
1 cup dry white wine
1 cup of sauce. (I usually take a can of plain tomato sauce with no added anything)
1 tablespoon fresh or 1 teaspoon dry oregano
salt and pepper to taste

Directions
Now for the real easy part! Put vegetables in bottom of slow cooker. Place chicken on top. Pour in the wine. Mix sauce, oregano, salt and pepper. Pour over top.
Cover and slow cook for 6 hours or until chicken falls apart easily with a fork.

I”ll work out the nutrition in a bit, but skipping the oil really cuts down the calories! Enjoy!
